And in case you don't have time for any of the recipes below, here are your some quick evening meals:

- Order sushi. Brown rice if it doesn't insult the purist in you. Salmon, avocado, cucumber + brown rice is a slam dunk containing fiber, prebiotics, protein and omega-3 fatty acids. 

- Chicken veggie peanut stir-fry on brown rice or soba noodles. Don't use pre-packaged peanut sauce full of sugar. Make your own with peanut butter, olive oil, and soy sauce.

- Chicken herb sausage with polenta cake + roasted hen of the woods. Usually I buy sausage from the farmers market and freeze it, use the Food Merchants Organic Polenta roll, and brown some beautiful pieces of maitake on a cast-iron pan.

- Tofu fajitas + sprouted tortillas. I love Maria and Ricardo's non-GMO sprouted grains tortillas, made with organic sprouted spelt + barley. Sautee some mushrooms, peppers, onions and tofu and voilà!
